This coffee is grown at an altitude of 1100 to 1400 meters above sea level.

It undergoes a fully washed process and is dried on patios.

Harvest season is from November to April.

The Gallardo family has owned and operated La Santa since the 1960s.  Jose Manuel Gallardo currently owns the farm while his son, Pocho, manages the 225 hectare farm and his daughter manages the administrative side of the business.  La Santa ensures that 100% of the cherries that are used in their coffee production are ripe.  Cherries that don’t meet La Santa’s standards are hand separated to guarantee the highest quality and intensity of flavor.  After the cherries are picked, they are washed then dried on patios.
