This coffee is grown at an elevation of 1,220 – 1,524 meters above sea level. It undergoes a natural process and is sun dried on patios. Harvest season is from December to April.
In 2000, 62 Honduran coffee farmers came together to form COMSA (Cafe Organico Marcala, S.A.) with the goal of transitioning from conventional to organic production. By 2001, COMSA earned their organic certification from Bio Latina which allowed them to market their coffee to more international buyers resulting in better selling prices for their coffee. COMSA was granted Fair Trade certification in February 2006. With the Fair Trade price premium, COMSA has been able to fund social projects such as paying teacher salaries and purchasing school supplies. It has also allowed them to finance the construction of school kitchens which support the Merienda Escolar program. This program provides meals to school children.
