Guatemalan Secuachil Coban Chicoj (Organic)


Notes of dark chocolate, grapes and raspberry.



This coffee is grown at an altitude of 1,300 – 1,500 meters above sea level.  It undergoes a fully washed process.  It is dried on patios in addition to using solar dried machines.  The coffee beans are harvested from December to March.  Chicoj is a sub cooperative of Fedecovera (Federacion de Cooperativas de las Verapaces) which is located in Coban.  The cooperative has about 1,400 members of which 300 produce coffee in the village of Secuachil.  These coffee farmers cultivate a varietal known as Anacafe 14 which is a naturally occurring hybrid created from the Pacamara and Catimor varietals.  Anacafe is said to have been discovered in Chiquimula around 1980.
