This micro mill is owned by Dona Francisca and her husband Oscar Chacon. They are 3rd generation coffee producers. Their micro mill is located in the Sabanillia de Alajuela in the Central Valley region of Costa Rica. Francisca and Oscar believe in preserving the environment so they keep water use at the mill to a minimum. The couple was one of the first pioneers of high-quality honey and natural process coffees in Central America. They began experimenting with the special process in 2009. During coffee harvest season, they measure the brix content in their coffee cherries to determine the best time to pick the coffee so that it provides a sweet and fruit forward profile.
The micro mill is located at an altitude of 1,300 – 1,600 meters above sea level. The beans undergo a washed process and they are sun dried. Harvest season is from December through March.
