This coffee is grown at an elevation of 1,800 – 2,100 meters above sea level. It undergoes a fully washed process and is dried on raised beds. The coffee is harvested from October to March. The municipality of Inza is located in the middle of the Colombian Massif which is a mountain region where most of the major rivers in the country begin including the Magdalena, Cauca and Patia rivers. The region is ideal for growing specialty coffee because of the surrounding volcanoes, altitude and climate. Many of the small coffee farmers in the area have produced their coffee with little to no chemicals for generations. The Pillimue family have led a program to certify 80 producers in organic practices. This group of producers have become leaders in innovative organic practices, lead community workshops in order to re-use waste created by the farms and educated producers on how to make bio fertilizers that are cheap and useful.
